When you cook a kingfish, you’re essentially adding in some fish oil to your favorite fish sauce.
In this case, it’s butter.
The recipe calls for using kingfish meat and fish broth.
It’s also quite filling.
But what’s the best way to prepare a kingfisher?
In this recipe, I like to start by grilling the kingfishers flank, belly, and legs.
I also like to remove the tail and fins, so I can add some meat to the mix later.
To prepare the meat, I cook the fish in the oven.
I use a slow cooker, but if you don’t have one, you can make this a quick process by heating a large pan of oil over medium-high heat.
Once the fish is cooked through, add the rest of the ingredients and stir to combine.
Add the king fish to the pan, and stir until the mixture is evenly distributed.
Remove the pan from the heat and allow the fish to rest for 10 minutes, until it is fully cooked.
Remove from the pan and set aside.
When the fish are finished, place them on a baking sheet lined with parchment paper and let them rest for another 5 minutes.
Remove and set them aside.
Next, prepare the butter sauce.
To make this, I use my standard butter recipe.
It takes a few minutes to mix and cook the butter.
Once it’s mixed and smooth, add a small amount of salt and pepper.
Allow the butter to sit for about 10 minutes and then add a few tablespoons of the fish sauce to the butter mixture.
You want to taste the butter before adding the rest.
Next add in some salt and black pepper and stir.
It should make a very thick sauce.
Once smooth, pour the sauce over the kingfin.
Serve with some lemon wedges, if you prefer.
This is a great way to make some extra delicious fish sauce that will keep in the fridge.
